A Summer Apricot Salad

If I were someone who was organized enough to throw a spring dinner party I’d most certainly serve this beautiful apricot salad. But I’m not. So my husband and I enjoy it on the back porch with a glass of prosecco and a splash of St. Germain liqueur.
